Coconut Rosewater Floral Popsicles

Nothing says spring quite like flowers.  I have been flower crazed lately.  So when I saw edible flowers at the market, I couldn't resist.  I brought them home, not sure what I'd do with them, but knowing that I had to have them.  Then at Yoga Teacher Training we volunteered our time at Crack in the Sidewalk Farmlet, and we ended up harvesting edible flowers ourselves.  So by the end of the weekend I had more edible flowers than I knew what to do with.  Knowing they wouldn't last long, I decided to make floral popsicles to preserve their beauty.

I wanted to keep the recipe super simple and clean.  I've had a lot of requests for recipes that are easy for young kids to help with and this is definitely one of those.  The only ingredients are coconut water, rosewater, and edible flowers.  Doesn't get much simpler than that!  And coconut water is a great way to keep kids (and grownups) hydrated because it is full of electrolytes.  If possible, I highly recommend using raw coconut water from fresh young coconuts.  The flavor is a million times better than the packaged coconut water and you will avoid sneaky added ingredients.  Now get started and go eat some flowers!

Coconut Rosewater Floral Popsicles


Ingredients:


3 cups raw coconut water

1.5 tbsp rosewater

2 oz edible flowers 

Pour coconut water and rosewater into a large pitcher and stir.  Pour mixture into popsicle molds and place in freezer.  Check in on them every once in a while and take them out when they begin to feel slushy.  It took mine 1.5 - 2 hours to get to this partially frozen stage.  Take the popsicles out and begin adding flowers.  You can use your popsicle sticks to push them down to the bottom.  If they pop back up to the top it means the popsicles need to freeze a bit more.  Once you have added as many flowers as you like, add your popsicle sticks and put them back in the freezer until completely frozen.  When you are ready to eat them, run a little warm water over your popsicle molds to help ease them out.  Enjoy!

*If you do not own popsicle molds, you can use paper cups and just tear them off when the popsicles are frozen.
